Gluten Free and Dairy Free Healthy Pumpkin Chocolate Loaf Bread

This recipe is perfect for those who love chocolate and pumpkin. It's easy to make and it's gluten-free and dairy-free. A healthy take on store bought bakery goods - this loaf bread is great for breakfast, snack and on the go.

Ingredients
  

  • 2 Cups Bob's Red Mill Paleo Gluten Free Mix
  • 2 Eggs
  • 1 Cup Pumpkin Puree
  • 1/2 Cup Coconut Sugar
  • ½ Cup Melted Coconut Oil
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • Zest of 1 Orange
  • Pumpkin Spice (as much as you want)
  • 1/3 Pecans, Walnuts, Pumpkin Seeds (as much as you want)
  • 1/2 Cup Chocolate Chips

Instructions
 

  • Get all the ingredients out on the table.
  • Mix dry ingredients: Bob Red Mill's Paleo Gluten- Free flour, pumpkin pie spice, orange zest along with the baking soda and baking powder.
  • Mix wet ingredients: eggs, coconut sugar, coconut oil, pumpkin puree.
  • Mix the dry and wet ingredients together.
  • Add in the chocolate chips, pecans, walnuts, pumpkin seeds - whatever your heart desires.
  • Pour in the load pan and then decorate the top with any toppings you like such as chocolate chips, nuts, seeds and/or even sprinkles!
  • Bake for 45 minutes!
  • Once the oven beeps - take it out of the oven and let it cool before indulging!
