Dairy Free & Gluten Free Chocolate Almond Bark

DF & GF Chocolate Bark
Perfect for those who love chocolate but want to be healthy. Indulge in this guilt-free chocolate! This chocolate almond bark is perfect for snacking or gifting, and it's dairy-free, gluten-free, and delicious!
Ingredients
- 2 Cups dairy-free dark chocolate chips (or your favorite dairy-free chocolate bar, chopped)
- 1 Cup Raw Almonds (whole or roughly chopped)
- 1 Tbsp Coconut Oil
- 1 Tsp Vanilla Extract
- Mix ins (seeds – hemp hearts, pumpkin seeds, etc.)
- Pinch of Sea Salt (optional, for sprinkling on top)
Instructions
- Line a baking sheet with parchment paper to prevent sticking and set aside.
- In a microwave-safe bowl, combine the dairy-free chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until the chocolate is fully melted and smooth. Alternatively, you can use a double boiler to melt the chocolate.
- Stir in the vanilla extract for extra flavour.
- If you prefer a deeper, roasted almond flavor, toast the almonds in a dry pan over medium heat for 3-5 minutes, stirring frequently. Allow them to cool slightly before adding them to the chocolate. If not, can add the almonds in like that. Add the rest of the mix ins you desire such as pumpkin seeds.
- Fold the almonds and mix ins into the melted chocolate, ensuring they are evenly coated.
- Pour the chocolate mixture onto the prepared baking sheet, spreading it out evenly with a spatula until it's about 1/4-inch thick. For a more textured bark, you can sprinkle additional almonds on top.
- If desired, lightly sprinkle a pinch of sea salt on top for a sweet and salty finish.
- Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate has fully hardened.
- Once the chocolate is firm, break it into bite-sized pieces. Store the almond bark in an airtight container in the fridge to keep it fresh.
